Steamed Herbed Barramundi In Banana Leaf


The fragrant herbs mixed with green curry paste imparts an exquisite flavour into fish when wrapped and cooked in a banana leaf

  • ¼ cup Five Tastes Thai Green Curry paste
  • ¼ cup chopped garlic chives
  • 3 spring onions, finely chopped
  • 1 coriander plant (root, stem and leaves), finely chopped
  • 1 kaffir lime leaf, finely shredded
  • 1 lemongrass, finely chopped
  • 500g Barramundi fillets
  • 4 banana leaves
  • Chilli and limes, for serving


Step 1

Combine Five Tastes Curry Paste, garlic chives, spring onions, coriander, kaffir lime and lemongrass in a bowl. Mix well.

Step 2

Place each piece of barramundi on banana leaf. Spread evenly with curry mixture, roll up and secure with toothpicks.

Step 3

Cook banana parcels in a steamer for 10 minutes or cook over hot coals for 12 – 15 minutes, turning regularly.

Step 4

Remove from heat, carefully unfold banana leaf. Serve sprinkled with chilli and cheeks of lime.

Tasty Tip!

If unable to get banana leaf, wrap in baking paper then foil. Snapper may be used. To check if fish is cooked, insert a fork into the fish through the banana leaf and if it enters and releases easily - fish is cooked, if you feel resistance, cook a little longer.
