Potato & Cashew Green Curry


A perfectly balanced dish with cashews adding a hint of richness

Serves: 4


  • 1 tablespoon peanut oil
  • 500g diced potato
  • 500g diced chicken thigh
  • ½ x 210g jar Five Tastes Thai Green Curry Paste
  • 270ml can coconut milk
  • 2 teaspoons fish sauce
  • 1 teaspoon sugar
  • 100g broccoli florets
  • 100g snow peas, trimmed
  • 2 spring onions, sliced
  • 1/3 cup cashews
  • Juice of ½ lime
  • Cooked jasmine rice, for serving


Step 1

Heat oil in a non stick wok or frypan over medium heat and stir fry potatoes and chicken for 5 minutes. Add Five Tastes Curry Paste and cook for 1 minute or until fragrant. Stir in coconut milk, fish sauce and sugar. Simmer for a further 4-5 minutes with a lid on.

Step 2

Add broccoli and continue to simmer with lid on for 6-8 minutes or until broccoli and potato are tender.

Step 3

Stir through snow peas, spring onion and cashews and cook for 2 minutes. Remove from heat, add lime juice and serve immediately with jasmine rice.

Tasty Tip!

Any green vegetable of choice may be used e.g. beans, sugar snap peas or bok choy.
