Corn, Crab And Noodle Soup


Quick, simple and very tasty Thai style version of corn soup.

Serves: 4


  • ½ x 375g packet rice noodles
  • 210g jar Five Tastes Laksa Paste
  • 420g can creamed corn
  • 270ml coconut milk
  • 3 spring onions, sliced, plus extra for garnish
  • 1 stalk lemongrass, bruised (see tip below)
  • 1 cup water
  • 2 x 170g can crab meat, drained
  • 1 teaspoon fish sauce


Step 1

Cook noodles following packet directions. Drain and set aside to keep warm.

Step 2

Meanwhile, heat a wok over medium-low heat. Add Five Tastes Laksa Paste and cook for 1 minute or until fragrant.

Step 3

Add creamed corn, coconut milk, spring onions, lemongrass and water, increase heat and bring to the boil. Stir in fish sauce and crab meat, cover and simmer for 5 minutes.

Step 4

Place noodles into serving bowls, reserving a few for garnish. Discard lemongrass and spoon soup over noodles, top with reserved noodles and spring onion.

Tasty Tip!

Remove base from lemongrass, lightly beat with a pestle or back of a cooks knife, this will allow flavour to impart from stem while cooking and then is easily removed.
