Coconut Chicken And Noodle Laksa


Is this the ultimate in comfort food? Fragrant coconut laksa with poached chicken, kaffir lime and noodles, topped with crunchy roasted peanuts and mint.

  • ½ x 210g jar Five Tastes Laksa Paste
  • 1 chicken breast fillet
  • 165ml coconut milk
  • 1 cup chicken stock
  • 1 teaspoon fish sauce
  • 1 kaffir lime leaf, finely shredded
  • ½ x 375g packet rice noodles
  • ¼ cup Chinese cabbage or wombok, shredded
  • 1 cup bean shoots
  • ¼ cup fresh Vietnamese mint leaves
  • 2 tablespoons roughly chopped roasted peanuts
  • Lime wedges, to serve
  • 1 long red chilli, sliced, for garnish (optional)


Step 1

Spread Five Tastes Laksa Paste over chicken and refrigerate for 1 hour to marinate.

Step 2

Combine coconut milk and chicken stock in a small saucepan and bring to a gentle simmer. Add chicken, fish sauce and kaffir lime leaf, cover and poach for 10-15 minutes or until chicken is cooked through. Remove chicken and shred before returning to simmering laksa broth.

Step 3

Meanwhile, cook noodles following packet directions and drain well.

Step 4

Serve noodles with chicken and laksa broth, cabbage, bean shoots, mint and peanuts. Serve with lime wedges and chilli.

Tasty Tip!

Try adding sliced red capsicum, sugar snap peas, broccolini or any other of your favourite stir fry vegetables. Simply add to the coconut milk mixture in the last five minutes cooking time.
