Spread Five Tastes Curry Paste over chicken, cover and refrigerate while preparing remaining ingredients.
Prepare vermicelli following packet directions. Rinse under cold water and set aside.
Heat oil in frypan over medium heat and cook chicken for 5 minutes on each side or until cooked through. Set aside to cool, slice thinly into strips.
In a bowl of hot water, dip 1 rice paper sheet until softened then lay flat. Place some vermicelli along the centre, top with coriander, capsicum, avocado, carrot and chicken. Fold ends inwards over filling then roll up to encase. Repeat with remaining ingredients to make 8-10 rolls.
Serve with dipping sauce of choice such as soy sauce, sweet chilli or hoi sin.
