Thai Basil & Chilli Beef Salad

Full of flavour and colour, this salad makes a delicious hearty meal anytime of the week.

Ingredients

  • 45g Five Tastes Stir Fry Shot - Thai Basil & Chilli
  • Zest and juice of 1 small lime
  • 2 teaspoons fish sauce
  • 2 teaspoons grated palm sugar
  • 250g piece beef eye fillet
  • 1 small carrot, cut into julienne strips
  • ½ small red onion, thinly sliced (optional)
  • 1 small Lebanese cucumber, halved lengthways and thinly sliced
  • 1 small red capsicum, cut into julienne strips
  • 50g snow peas, thinly sliced
  • ⅓ cup Thai basil leaves
  • 1 spring onion, thinly sliced
  • ⅓ cup roasted cashew nuts

Instructions

Step 1

Combine 2 teaspoons Five Tastes Stir Fry Shot, lime zest and juice, fish sauce and palm sugar in a small screw top jar and shake well to make a dressing. Set aside.

Step 2

Thinly slice beef fillet into 5mm thick slices and place in a bowl. Add remaining Five Tastes Stir Fry Shot and toss gently to coat beef well.

Step 3

Heat a lightly oiled non stick wok or frypan over medium heat and cook beef on both sides until just cooked and charred. Remove and rest for 5 minutes.

Step 4

Combine remaining ingredients except cashew nuts and place on a large platter. Top with beef strips and cashew nuts. Drizzle with dressing and serve.

Tasty Tip!

Beef fillet will slice easier if partially frozen.
