Heat oil in a non stick wok or frypan over medium heat and stir fry potatoes and chicken for 5 minutes. Add Five Tastes Curry Paste and cook for 1 minute or until fragrant. Stir in coconut milk, fish sauce and sugar. Simmer for a further 4-5 minutes with a lid on.
Add broccoli and continue to simmer with lid on for 6-8 minutes or until broccoli and potato are tender.
Stir through snow peas, spring onion and cashews and cook for 2 minutes. Remove from heat, add lime juice and serve immediately with jasmine rice.
