Crisp Green Curry

A deliciously light and fresh dish that is a cross between a stir fry and salad with a full-bodied taste

Ingredients

  • 1 tablespoon peanut oil
  • 200-250g tofu, sliced
  • ½ x 210g jar Five Tastes Thai Green Curry Paste, stirred
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sugar
  • 100g snow peas
  • 4 spring onions, thinly sliced lengthways
  • 1 red capsicum, thinly sliced
  • 1 cup fresh coriander leaves
  • ¼ cup roasted peanuts
  • Lime wedges, for serving

Instructions

Step 1

Heat oil in a non stick wok or frypan. Cook tofu until lightly browned.

Step 2

Add Five Tastes Curry Paste, ginger, sugar and stir fry for 1 minute.

Step 3

Remove from heat and add snow peas, spring onions, capsicum, coriander and peanuts. Toss to combine.

Step 4

Serve immediately with a wedge of lime if desired.

Tasty Tip!

This dish can be served alone or with steamed rice. If the chilli heat level is too intense, add a little extra sugar.
