Is this the ultimate in comfort food? Fragrant coconut laksa with poached chicken, kaffir lime and noodles, topped with crunchy roasted peanuts and mint.
Instructions
Step 1
Spread Five Tastes Laksa Paste over chicken and refrigerate for 1 hour to marinate.
Step 2
Combine coconut milk and chicken stock in a small saucepan and bring to a gentle simmer. Add chicken, fish sauce and kaffir lime leaf, cover and poach for 10-15 minutes or until chicken is cooked through. Remove chicken and shred before returning to simmering laksa broth.
Step 3
Meanwhile, cook noodles following packet directions and drain well.
Step 4
Serve noodles with chicken and laksa broth, cabbage, bean shoots, mint and peanuts. Serve with lime wedges and chilli.
